Homemade Cobb Salad 

This salad is super easy to make and very filling! It’s packed with flavor! 

I have been trying to be better about eating my veggies and Cobb salad is one solution I’ve found. When I was on my mission in Boston, I used to order Cobb salad at every restaurant. I’m somewhat of a connoisseur, you might say. So I got back in touch with my roots and made up this baby! 


First things first- lettuce! I shredded a head of iceberg but romaine would work just as well! 

Then come the veggies. I chose one bell pepper sliced as shown. 


Then I cubed one avocado. I love avocado! My philosophy is, you can’t go wrong with cilantro. It just brings such a freshness to any Latin inspired meal. 


I then added the protein. Boil eggs and grilled chicken. Mix it all up. Add your favorite dressing (ranch, blue cheese, spices vinegrette, etc.) and DIG IN.  Specifics below! 


Ingredients:

  • 1/2 head iceberg lettuce 
  • 1/4 cilantro 
  • 1 whole red bell pepper
  • 1 tomatoe off the vine 
  • 4 chicken tenders
  • 4 boiled eggs 
  • Salt and pepper to taste 

This will feed two adult. Hope this inspires you to eat a little healthier!
