Fall Menu: Fry Bread

Every Halloween growing up, my cul-de-sac would gather in the middle of the street and eat chili and fry bread before the kids went out trick or treating. Every time I eat fry bread now, I am reminded of those sweet memories. Fry Bread, to me, screams fall. So of course, I put it on our fall menu board.

This recipe is very straight forward and very tasty. Kyle made the fry bread and I prepared the toppings.

A little side note, this is a meatless recipe but can be modified. Kyle and I did a “meat cleanse” week and this just happened to fall in this week. I would add grilled chicken or ground turkey/beef.

Fry Bread Recipe:

**Recipe modified from Allrecipes.com **Makes about 12 servings

  • 4 cups All-purpose flour
  • 1/2 tsp salt
  • 1 1/2 cups lukewarm water
  • 1 Tbsp baking powder
  • 2 cups Coconut oil for frying

Combine flour, salt, and baking powder in a bowl. Then stir in 1 1/2 cups lukewarm water. Knead until soft but not sticky. Shape dough into balls about 3 inches in diameter. Flatten into patties 1/2 inch thick, and make a small hole in the center of each patty. Fry one at a time in 1 inch of hot oil, turning to brown on both sides. Drain on paper towels.

Toppings:

  • 1 can black beans
  • 1/4 an onion, chopped
  • 1-2 limes, wedged
  • 1 cup shredded cheese
  • 1 head Romaine lettuce
  • Sour Cream
  • Hot Sauce

In a sauce pan, put butter and onions in. Saute onions until soft and light brown in color. Add in Black beans. Cook until the beans are warmed through. You can add salt and pepper to taste. Spread beans on the top of the fry bread, pile on the other ingredients as preferred. Each amount is approximately the amount you will need for all the fry bread feeding 4-6 people.

Fall Menu: CHILI


There is something about the leaves changing and the crispness in the air that makes me want to cuddle up with a hot bowl of chili and cornbread. I have been testing chili recipes since I moved to Utah. You see, I am from Arizona. And in Arizona there are two season, Summer and less summer. haha! So when I moved to Utah, last year, I loved being able to do “seasonal” things. And like any foodie will tell you, “seasonal” things include NEW RECIPES!!

This chili is for the milder pallet, but can be made spicier by simply adding some chili flakes, hot sauce, or hot peppers. Kyle added Cholula to his bowl.

One more thing before the recipe, this recipe can be made on a DIME! I am always looking for recipes that will feed a lot of people (or be used for other meals) for not a lot of dough. This is one of my go-to’s for that purpose! This recipe can also be made lighter or heavier depending on what you are looking for. For example, by changing the Steak for ground turkey meat you can cut some calories. Another plus is that you throw it all into the crockpot and THAT’S IT!

So without further ado:

Tay’s Fall Chili

yields 6-8 servings

  • 2 cans Dark Red Kidney Beans
  • 2 cans Chili Beans (not to be confused with chili in a can)
  • 1 can Pinto Beans
  • 1 can Beef Broth
  • 1 can Stewed Tomatoes
  • 1 packet Dried Onion Soup Mix
  • 1 pound Flank Steak, cubed
  • 1/2 tsp black pepper

Garnish:

  • Sliced Green Onions
  • Sour Cream
  • Lime, wedged
  • Grated Cheddar Cheese

Start by opening all cans and pouring them into a crockpot. Cube Steak and add to the crockpot as well. Add Dried soup packet and black pepper. Stir. Put lid on and cook on low for 8 hours. After eight hours, ladle into a bowl. Squeeze lime wedge (or two) into the bowl and then add the rest of the garnishes as you prefer. ENJOY!


The real kicker is that lime juice. It adds such a nice acidity to the savory bowl of chili. Stay tuned for more Fall Menu recipes through out the season!

How One Simple Decision Can Change Your Life: Part 2

Hi all! You know from reading our last post that we can choose to be happy, positive, and grateful regardless of our outside circumstances. Doing this will have an incredible impact on many aspects of our everyday lives. It will boost our performance at work, in school, in our relationships, and even strengthen our immune systems. If you haven’t read our last post on this subject, please do so here. This is part two. Here we will share some tips and tricks from our own lives as well as from the experts on how to train our brains to be more positive and thus boost our quality of life. But, how can I just choose to feel happy when my whole life is in turmoil you ask? Well, I think it all starts with how we stand.

What?

Yeah, you heard me. The first step to choose to be happy is choosing to stand how a happy person stands. Body language and posture have a huge effect on how we feel. In one of Tony Robbins speaking events, he taught, “Motion controls Emotion.” Think back to the last time you were sad. Maybe you are sad and down right now. Take a second and think back to how your posture was. If you are sad right now about something, take note on how you are standing or sitting. Is your general position down or up? Are you slouching with your gaze facing the floor, or are your shoulders back with your sight facing the sky? Odds are, if you’re sad then your body language is down. The problem is that most of us believe that the reason our body posture is down is because we are sad. Well, what if I told you that you are sad because your body posture is down? Don’t believe me? Let’s try an experiment. No matter how you are feeling right now, whether that be sad, happy, or just plain neutral, take a second and stand up. If you are at home or in some other private place, then that’s perfect. If you are in a public area with lots of people watching, then maybe wait until you get home to try this, unless you are really adventurous and don’t care about being stared at. Ready? Ok. Bend your knees, jump as high as you can with your fist in the air and yell “YES! I AM THE MASTER OF THE UNIVERSE!” Repeat three times, each time trying to jump higher and yell louder. (Note: we are not responsible for any injuries cause by doing this experiment. Do not jump too high, make sure you have good knees, and warm up a little;) Now you see why I suggested you try this at home. I’m willing to bet you $10 that you felt your energy spike and at least some of the stress/fear/gloom go away. You may even have laughed a little. When I tried this I instantly felt happier, lighter, and more energized. Why? Because motion controls emotion.

Another way to train your brain to be happy is to keep a gratitude journal. Writing down what we are grateful for forces our brain to focus on positive things. It is impossible to feel grateful and depressed at the same time. Doing this everyday over the course of a few weeks or months will leverage the power of Neuroplasticity to literally rewire the way our brains think. Instead of defaulting to negative thoughts when bad things happen, our brains will have trained themselves to focus on what we are grateful for and what we can learn from the situation. I tried this for about 3 months earlier this year and I can honestly say that it works! I need to get back into it. Taylor is really good at being grateful and positive and she kept a gratitude journal all throughout high school and after her mission. Coincidence? I think NOT!

Last but not least, happiness has a lot less to do with acquisition and a lot more to do with elimination. What do I mean by this? Most people focus on acquiring new things to be happy, yet they struggle with things such as guilt, holding grudges, stress, and other clutter. Instead of constantly trying to add more “good” to your life to be happy, first trying removing some “bad.” Tony Robbins (no introduction needed, and if you don’t know who he is then shame on you), recently shared a post on his Instagram that really resonated with me. It fits perfectly with this topic so I thought I would share it. Thank you, Tony!

Choosing to be positive by controlling your motions, keeping a gratitude journal, and eliminating negative habits has helped me tremendously, and it continues to help me every day. How One Simple Decision Can Change Your Life: Part one of a two-part series on happiness.

Hey everyone! Yes that’s Taco Bell above…SO GOOD! Anyway, Thanks for stopping by today. We are glad you did and feel that this post and its partner post will really help you have a new view on life. This is something that I have personally been working on recently, and I know that many people struggle with this because I do. It’s a small shift in thinking that can have a big impact on the quality of your life—Happiness. Happiness isn’t something you go out and find or buy or earn. Happiness is something that is within us all, (it is a choice), and if we know how to awaken it and have it work for us, then amazing things will start to happen. My mission president used to say “We aren’t responsible for the face that we have; we are responsible for the face that we wear!” Good Advice.

 

  1. The Happiness Advantage.

 

Happiness leads to success, not the other way around. In fact, usually people that seek success first as a means to be happy end up completely the opposite—overworked, overstressed, and overly miserable. Shawn Achor, who spent over ten years lecturing and researching at Harvard, participating in one of the largest studies on happiness ever performed, said in his TED talk (I LOVE watching TED talks) titled The Happiness Advantage that, “If Happiness is on the other side of success, then you’ll never get there…” and that, “your brain is 31% more productive at positive than it is at negative, neutral, or stressed.” In short, we reverse the formula for success by teaching that happiness comes first. Then that happiness boosts our performance and we become more successful. I wish I could go into greater detail, but I don’t want to write a novel about this because it’s already been done. When I brought up this book to my wife, she raved and raved about how good it was. Seriously you would think that the book was made out of pizza, that’s how excited she was.   1. Doctor? What Doctor?

 

Like I said before, choosing happiness is something that I’ve been working on personally these past few weeks. One of the reasons why was because I literally didn’t feel well. I was always tired, and I wasn’t sleeping well. My back also was really stiff and sore all the time, probably because I wasn’t sleeping well (or because of my nephews always wanting to play superman with me). There is a lot of fascinating research on the effect that Happiness has on our lives. In an article from ABC News written by Dr. Anjuli Srivastava, we learn that “Happiness may be associated with lower stress-related hormones and better immune function.” Isn’t that crazy? Feelings of happiness actually bolster and uplift your immune system. And if feelings of happiness bolster the immune system, then certainly feelings of stress and grief lower and suppress it. If we aren’t careful, this can turn into a downward spiral. Our sadness lowers our immune systems and our health deteriorates, which we react to by being sadder and more stressed and the cycle continues. The good news is that this spiral can also go upwards. In another article written by UC Berkeley’s magazine Greater Good, we learn that happiness is linked to stronger heart function, less aches and pains, and longer life. Seriously, the possibilities are endless. So instead of waiting for better health to make you happy, why don’t you start with being happy and let the health benefits follow?

 

  1. Let’s go on an adventure.

 

Ok, this one is a no brainer. Clearly you will enjoy life more if you are happy as opposed to being miserable. But the really unbelievable thing is the amount of people that still live life in the dumps. No, not the actually dumps where the trash goes…the metaphorica—well, you know what I mean. But really, we all know those people that are constantly negative about everything. Not only are they not enjoying this wonderful world we live in but they are no fun to even be around. Now, I’m not saying that we should pretend like bad times, tragedies, and trials don’t exist, because they certainly do. It would be ludicrous to write such moments off calling them happy, like putting on party hats and playing the Hokie Pokie at a funeral. Yes, there are certainly times to be sad, but I believe there are infinitely more reasons to be happy. Start searching for those reasons and life will change from a prison to a beautiful adventure.

On a side note, sometimes my wife is so funny. She will get all sad and mopey about something and when I ask what’s wrong or why she is sad she will say, “I don’t know. I just want to be sad right now!” Even now as I write this she stands behind her reasoning. “Sometimes you just gotta be sad” she says. She always bounces back really quickly though, so I’m not worried. Just don’t fall into the trap of always being sad.

So make the choice today to be a little happier than you were yesterday. I promise that if you do you will be, well, happier! Over time you will also start to see many other amazing benefits. We only went over three here, but believe me, there are more. So give it a shot! Surprise yourself.

(One final note before we close part one of this two-part series, and that is that we acknowledge the validity and sometimes severity of mental illness and the effect it can have on an individual. Cravings & 13 weeks

 

I can seeeee the light at the end of this tunnel called pregnancy! The light is bright and it’s the second trimester! I already am feeling less tired and less nauseous. The puking is down to one time a day, WHICH I CAN HANDLE!


Kyle is loving it because I started making dinner, doing the laundry, cleaning up, and EVEN decorated for fall! It feels good to be productive again.


We even made a fall to-do list, which you know has more food than activities on it (hehe!) It consist of apple cider, caramel apples, hayrides, pumpkin patches, and maybe even a Halloween party! I love this time of year! It takes me back to New England. A piece of my heart will forever be there. Last fall, we were lucky enough to go back and visit Boston. This year flights have been INSANELY priced. We will be lucky to make it to Arizona! This is not going to stop us from having the most amazing babymoon ever, though! All you mamas and papas out there, what kind of babymoon is best, Beach or City adventure? We are having the hardest time deciding! We kind of want to go somewhere we have never been and explore but we also want it to feel like a relaxing vacation! I would love to hear your comments!


Okay, let’s talk cravings. I am one who always thought they were a little exaggerated, and I somewhat still do. But I get it! Before being pregnant, I would have normal cravings all the time. Sometimes I would just NEED pizza for no good reason and I would go and get it! See I am a pizza girl. I could eat pizza for every single meal and never get bored! But my “taste” has completely changed. All of a sudden I have turned into the sub sandwich, green apple, grape, sour gummies kind of a girl. Which is so weird for me. Normally I would NEVER want that. People have told me that those cravings will increase as I get further along…so I guess I will keep you posted. I have looked at those wives’ tales and I am not sure if any of these cravings specifically point towards boy or girl. I know they are all just myths but it is fun to assume.

Other than that, this week has been filled with BYU homecoming festivities including a 5k and blue pancakes on Saturday, a fancy luncheon, lots of outreach marketing, studying, a movie premier and snuggles. I am going to try and post every Sunday so watch for the updates!

The plus sign that changed the world!

Well at this point the news is out! You are probably wondering, “did they just get married??” and “why are they announcing so early?” Well here is the answer to alll the questions and a little insight into what has actually been going on these past few weeks!

Was it planned?

Yes and no. Before Kyle and I got married, we talked about having kids. We both felt that we should start our family right away (maybe me more than Kyle.) We explored different kinds of birth control and quite honestly most of them made me a little uneasy. I didn’t want to do anything to my body that could possible inhibit my ability to having kids, because that is something that is really sacred to me. I did use birth control pills for about two months but didn’t really like the effects it had on me. When I went off of them we used a more natural method…very loosely, obviously! We knew that getting pregnant would be a possibility and we didn’t do much to prevent. We kind of just let whatever happen, happen.

I don’t know if every woman has this fear but I was so afraid that we wouldn’t be able to conceive. That fear is no longer a fear anymore! We got pregnant two months after going off the birth control pills, about four months of being married!

Why announce so early?

CAUSE I’M FREAKING HUGE! no, I’m serious! At 7 weeks my belly popped and has gotten bigger ever since! Because of it, everyone in my family thought we were having twins. We are really thanking our lucking stars to only be having ONE baby. At the moment, we just hit 12 weeks…like today haha.

I wrote the following when we first found out we were pregnant! We are so so excited to be growing our family. We are so grateful for the love and support and even more grateful for this amazing opportunity to grow and become more like our Savior, Jesus Christ and Heavenly Father.

There you have it folks. A faded blue sign. I starred at it thinking…what the heck is this suppose to mean!? I really couldn’t tell if it was positive of negative at first.

They say the first pee of the morning is the most potent so I believed them. I crawled out of bed early in the morning and peed right on the purple end of the stick. Kyle was still asleep. It was Sunday. I left it in the bathroom and crawled back into bed to wait the recommended two minutes.

That is what I saw when I went and checked on it. I snuck back into our room and said “ky…are you awake??” He turned over and said, “did you take it?? What did it say??” We had talked about taking it this morning the day before. He thought that I was pregnant because I had a migraine all weekend, so bad I started puking.

I said, “come and see”

He jumped out of bed and drifted into the bathroom. Picked up the stick. Them looked at me. “I knew it!” We hugged.

Then there was the moment of “are you sure??” It looks faded to me. We read the box and sure enough it confirmed.

Now what!?

We kept saying “I can’t believe it!” and “wow!”

We were excited and shocked!

So we put on our church clothes and went to church. I was so distracted! I changed my period app, Flo, to pregnant. It said the baby was a size of a sesame seed and that we were 5 WEEKS PREGGO! What!? How’d five weeks past so quickly!? You see they trick you! Technically we were two but the app, and everyone, I guess tracks from your last period. I’ll take it. We are ahead of the game!

Wahlburger Review 

Burgers. The all American fan food. Kyle and I love a good burger. Maybe Kyle more than me. We have been to some of the most amazing burger places across the west coast. This past weekend we vacationed in Las Vegas and found yet another burger place that is up there with the best burgers we have ever eaten. So with out further ado…Wahlburger.


Here is the glorious menu. They have burgers, sandwiches, salads and sides.


Kyle got the classic Wahlburger with their famous Wahlsauce. It was money in the bank. Sadly he ate it so fast that we didn’t have time to snap a pic of it 😬. Better luck next time I guess.


I got Jen’s chicken sandwich and I can honestly say that I’ve never had one better. There was so much flavor and it was juicy and simply delicious.

The service was awesome! We got our food so fast! I was amazed! Another thing that I will NEVER forget about this place is the ranch. It sound like a strange thing. But this is the best ranch fries have ever been dipped in. No joke. It was a house made ranch with a kick.

Homemade Cobb Salad 

This salad is super easy to make and very filling! It’s packed with flavor! 

I have been trying to be better about eating my veggies and Cobb salad is one solution I’ve found. When I was on my mission in Boston, I used to order Cobb salad at every restaurant. I’m somewhat of a connoisseur, you might say. So I got back in touch with my roots and made up this baby! 


First things first- lettuce! I shredded a head of iceberg but romaine would work just as well! 

Then come the veggies. I chose one bell pepper sliced as shown. 


Then I cubed one avocado. I love avocado! My philosophy is, you can’t go wrong with cilantro. It just brings such a freshness to any Latin inspired meal. 


I then added the protein. Boil eggs and grilled chicken. Mix it all up. Add your favorite dressing (ranch, blue cheese, spices vinegrette, etc.) and DIG IN.  Specifics below! 


Ingredients:

  • 1/2 head iceberg lettuce 
  • 1/4 cilantro 
  • 1 whole red bell pepper
  • 1 tomatoe off the vine 
  • 4 chicken tenders
  • 4 boiled eggs 
  • Salt and pepper to taste 

This will feed two adult. Hope this inspires you to eat a little healthier!

One Two Lash Review

Lashes and eyebrows are all the rage these days. Getting them longer, thicker & darker is the challenge. I have been in the market to find less invasive or permanite ways of doing this. I tried the glue-in eyelashes, which I LOVE the look of! So much so that I wore them at our wedding, but they just didn’t last. The max I ever got out of them was two hours.


I was talking about it with one of my friends and she told me about One Two Lash. They have a 60 day money back guarantee, so thought I’d just try them and see what it was all about. If I didn’t like them, I would just return them. I ordered the Regular lash and then 5 months later ordered the Bold lash because I loved them and wanted something a little more dramatic. They shipped for free to my home in Utah within 3 days (they ship from California.)

Including in the package are step-by-step instructions on how to put them on, a cute “hello lash lover” card, receipt, & a case with all the lashes in them. In the case there are two pairs of lashes for each eye. Here is how it works:

There is a TINY MAGNET on two strips of lashes. Those strips sandwich your actual lash. You don’t have to curl your lash or wear mascara for them to stay but, for me, it does make it easier to get them on.


You want to get them as close to your lash line as possible. They advise not to put mascara on the actual lash extension (so that it last longer.) So what I do is I curl my lashes & put one coat of mascara on, then put on the lash extensions. I put only enough mascara so that the extensions will be able to clip faster.


I love these things! They are super easy to use! My first time It took me around 3 tries to get on, after that it was a breeze. I seriously forget I am wearing them sometimes! They are light weight & they make getting ready in the morning that much quicker!

My first pair of lashes, one of the magnets came off. This was my own fault, though. They tell you to gently slide the lashes off when finished with them. I tried to peel them off. That only happened to one lash strip for the three months I had them. I say “had” because I left the rest of the lashes in our hotel room on our honeymoon!

These extensions, however, are not your $7-$10 lashes you get at Sally’s. They run for $69 for two pairs. I wish that they were a little less expensive but they are reasonable enough if you compare them to getting lash extensions. Getting the lash extensions from a salon you are looking at $100-$200 plus fills.
